The star chef talks about the tranquility of the city and the feeling of home.

In our portrait series "Local Heroes" Paul gives us an insight into his personal Vienna.

What do you like about the area? Why are you in the 7th district?

I love the charming flair of the neighborhood, as well as the small individual businesses and restaurants.

What can one buy in your bistro? What is the passion behind it?

Quality and enjoyment fascinate me and drive me. To present a multifaceted vegetarian and vegan cuisine on a different level.

Either in our flagship restaurant TIAN in the 1st district on a two hour walk through the vegetable garden or on a Sharing Chefs Garden and Sharing Breakfast in our Bistro - both a beautiful culinary experience.

Only in Vienna

A high density of Michelin star restaurants, that I can all highly recommend. And Vienna is the only city with vineyards.

Better somewhere else

The mountains are better in Tyrol ;o).

Sweet Vienna

Viola in Strozzigasse – I like her fine little sweet treats 
and Marischka in second district in Gredlerstraße
afterwards the town’s best espresso at Balthasar on Nestroyplatz – simply a dream.

Hearty Vienna

Gasthaus Hausmair: the most delicious goulash in Vienna.
Am Nordpol: wonderful Bohemian cuisine.
Wieninger on Nussberg: “super Brettljaus’n” and a sensational view.

When it gets dark

You absolutely have to go to Bruder for a drink – one of a kind.

Or a decent glass of wine at O’boufés and Mast.

Not in any tourist guide

Sorry I never red one.

Your favorite place

I’ll keep that one to myself.

Must-see

In winter: the Christmas market on Spittelberg.

In autumn: the Viennese vineyards, especially on Nussberg.

In summer: open air cinema in Augarten.

In spring: the State Opera and Konzerthaus.

You can skip, although in the guide?

By now, I’d say the Naschmarkt – although I love the market stalls of Gegenbauer, Christian Pöhl, Umar, Urbanek and the Nenis. It is way overcrowded and the quality increasingly disputable.

What do you love about the city?

I love to be able to drink the tap water! There is a good choice of restaurants. 

And on top, the city emanates a certain peace for me. It’s very green and clean and public transport is great and good value for money.
